Does converting video formats to xbox 360 acceptalbe formats take away quality?

I have a lot of movies on a external harddrive and some of them don't play on my xbox 360. I want to convert them to be playable but i don't want to sacrifice quality. A lot of them are hd Will the quality be sacrificed if i convert?
